Peach Oat Crumble
This yummy peach oat crumble dessert is lower in sugar and made with nutritious foods (peaches, oats, coconut flakes, almonds, almond butter). I like to make a small batch of this up so there is not too much temptation lying around the house!
Funny story. We planted a peach tree in our yard last fall and we were so excited to have about 9 peaches growing on our little tree this year. We were all watching the peaches very closely and waiting for them to ripen. My three-year-old son, Otis, asked almost everyday “Mom, are they ready yet?”, you know because that’s what three-year-olds do. Anyway, in August we went on a week-long camping trip, and I remember thinking to myself when we get back those peaches are finally going to be ready! What should we make: crumble, smoothies, muffins, grilled, or just enjoy their deliciousness of fresh home-grown peaches? Well, this dilemma never came to be, because when we returned from our trip the squirrels had eaten every single peach. Not even a pit lying around! I guess there is always next year, and if anyone has non-violent tricks for taming pesky peach eating squirrels do share!
How to Make Peach Oat Crumble
This recipe is about as easy as it gets for dessert, it doesn’t even require a mixer. To start preheat the oven to 350 degrees and then make the peach base. You can certainly use fresh peaches for this recipe, but frozen peaches work just fine in this recipe too. If using fresh peaches, save the pits and make peach noyaux-peach pit extract! Add the peaches, lemon juice, water, and arrowroot powder to a mixing bowl. Stir everything together until incorporated and then pour into a baking dish. A small baking dis works great. I like to use a 9″x7″ glass baking dish, this size works great.
Next make the oat crumble. In a mixing bowl, fine to reuse the same one from the peach base, add oats, coconut, almond slices, and cinnamon. Mix together all the dry ingredients and then add the almond butter and vanilla extract. Mix everything together, this will be a really dry mixture and will require elbow grease. Sometimes it just easier to get in there with your hands! Once the crumble is mixed, crumble it over the peach base in your baking dish. Then pop the baking dish in the oven for 45 minutes and voila! Delicious, warm peach oat crumble. Top with some vanilla ice cream for a gourmet treat!

Ingredients
- 10-ounce bag of frozen peaches (about 3 fresh peaches, sliced)
- Juice of 1 lemon
- 1/2 tablespoon of water
- 1 tablespoon of arrowroot powder (or cornstarch)
- 1/4 cup of rolled oats
- 1/4 cup of dried coconut flakes
- 1/4 cup of sliced almonds
- 1/4 cup of sugar
- 1/4 teaspoon of ground cinnamon
- 1/4 cup of almond butter
- 1/4 teaspoon vanilla extract
Instructions
- Preheat oven to 350°.
- Make the peach base: in a small bowl mix together the peaches, lemon juice, water, and arrowroot powder. Pour the mixture into a small glass baking dish (like a 7×5 Pyrex dish).
- Make the crumble: add the oats, coconut, almonds, sugar, and cinnamon to a bowl. Mix together until evenly incorporated. Add the almond butter, and vanilla extract. Mix together by hand to fully incorporate that sticky almond butter throughout. This should be a dry crumble.
- Add the crumble mixture on top of the peaches. Pop it in the oven to bake for 45 minutes.
- Serve warm with some vanilla ice cream, my favorite is SO Delicious Vanilla Bean made with cashew milk. Yum!

Keeps in the refrigerator for up to 5 days. Best warmed up!
