If you love avocados, you’ve got to try this delicious green goop. It’s seriously good. I may have just eaten a spoonful after loading up multiple scoops on my southwest quinoa bowl. This sauce is creamy, mildly spicy, has a citrus punch, and is finished off with some tasty fresh cilantro. With only whole food ingredients, this is a healthy sauce you can feel good about eating. Plus, my kids absolutely love this stuff.

What are Tomatillos?

Have you ever seen these funny-looking things at the grocery store? Usually near the tomatoes, they do in fact look like green tomatoes under these deliciate flower like husks. These are tomatillos, a fruit common in Mexican cooking and native to Central America. They may look like a green tomato but they are more closely related to ground cherries. They have a very citrusy flavor, almost like lime. My favorite way to use tomatillos is in sauces. They add a perfect tangy zip to a sauce, hence why they are commonly used in salsa verde.

When using tomatillos, make sure to peel the husk off and rinse the fruit. They are always sticky, but the stickiness will easily rinse away with water. I usually cut the tomatillos into quarters before tossing them in the blender. They are, however, traditionally cooked prior to being blended in salsa verde. Did I mention that tomatillos are extremely easy to grow? If you can handle tomatoes, you can grow these too. Especially if you are in a warmer, arid climate.

Avocado & Tomatillo Sauce

Green creamy goop. This delicious avocado and tomatillo sauce is delicious on salads, tacos, or pretty much anything!

Ingredients

Units Scale
  • 2 medium avocados
  • 4 tomatillos, peeled and washed
  • 1 clove of garlic
  • 1 jalapeño
  • 1 tablespoon apple cider vinegar
  • 2 limes, juiced
  • 1 cup of cilantro, roughly chopped
  • 1/4 cup of water
  • Pinch of salt

Instructions

  1. Toss all ingredients into a blender and blend until smooth. It’s that easy, folks!

Keeps in the refrigerator for up to 4 days
