Carrot Ginger Dressing

This Japanese-style carrot ginger dressing is so good, I think I could drink it like a smoothie! It is super easy to make, a quick toss everything in the blender and voila. I love to make a large batch of this and have it handy in the refrigerator for delicious weekday salads. I especially love this salad dressing because it’s loaded with veggies. Instead of dousing a salad in store-bought dressing with cheap, unhealthy oils and unpronounceable ingredients, this dressing adds a boost of nutrients that are great for your gut health. More of that, please!

Why is Ginger so Good for Us?

Ginger is great for your gut. According to John Hopkins Medicine, ginger encourages efficient digestion, aiding with nausea, gas, and bloating relief. It is often used to ease morning sickness during pregnancy. Not to mention, it is a flavor powerhouse. Zippy, zesty, and sometimes almost spicy. Ginger soothes digestion while adding lots of flavor to our foods.

Health Benefits of Carrots

The carrots in this dressing make it a lovely shade of orange, but they also pack a huge vitamin punch. According to WebMD, 1/2 cup of carrots contains the following:

  • 73% of your daily requirement of vitamin A
  • 9% of your daily vitamin K
  • 8% of your daily potassium and fiber
  • 5% of your daily vitamin C
  • 2% of your daily calcium and iron

Carrots are know to be good for your vision due to their high beta carotene content. I also find they are amazing for my skin. When I eat a lot of carrots, like my favorite orange smoothie, I can visibly see a difference in my complexion. My skin has a healthy, radiant glow, no tanning needed!

Onions are Awesome

Ginger is great, carrots rock, but onions are awesome. Healthline says onions are a natural prebiotic, help increase bone density, improve heart health, have anticancer compounds, regulate blood sugar, and have antibacterial properties. Wow! My oldest son Lucian hates onions, or so he says, he loves chana saag (which has a LOT of onions). Basically he loves the flavor of cooked onions, but hates the idea of raw onions that he can see, typical kid right? We read through all the health benefits of onions together and he was so impressed he’s willing to give them another try. I love his enthusiasm towards living a healthy life.

Recipe for an easy-to-make healthy carrot ginger dressing that is amazingly delicious and can be whipped up in 5 minutes!

Ingredients

Units Scale
  • 1 small white or yellow onion, peeled and roughly chopped
  • 3 carrots, washed and ends cut off, roughly chopped
  • 2-inch size knob of fresh ginger, washed and trimmed
  • 1/2 tablespoon honey
  • 1/2 cup of soy sauce
  • 3/4 cup rice vinegar
  • 1/4 cup olive oil

Instructions

  1. Add all ingredients to a blender pitcher: onion, carrots, ginger, honey, soy sauce, rice vinegar, and olive oil.
  2. Blend on high until smooth. That’s it! Dressing is ready to enjoy.

Notes

This dressing is thick, more like a smoothie. You can thin it if it’s too thick to pour, using more vinegar or water if you don’t want it as acidic.
