Yes you read that correctly. Bear scat, and it’s delicious!

Inspired by the classic Engine 2 Cookbook by Rip and Jane Esselstyn, this delicious dessert is super simple to make. Naturally it is a kid favorite just because of the name. Bear scat is so easy to make my kids can whip this up on their own, which is an extra special treat for this mom! Heading to a summer BBQ and want a good conversation starter? Upgrade Your Chocolate Bar

I love to nibble on a good dark chocolate bar in the evenings. 2-3 squares after dinner is my favorite dessert. But that can get real pricey in a family of four with high quality chocolate bars hovering around $4 a bar these days. This bear scat puts my chocolate budget back in check. Plus I can add whatever delicious healthy extras I’m in the mood for. Which makes me feel a lot better about my chocolate indulgence. Great bear scat additions are coconut flakes, cashews, chia seeds, and of course blueberries. Really any berries could work, dried fruit is great too. You can mix and match and add your favorites.

I’m not sure how this has happened in our house, but there seems to be a trend – the more revolting something sounds, the more likely my kids are to eat it. Bear scat, baby fish eyes (also known as quinoa). We like to have a little fun with our food, but also I think this helps our kids be curious, adventurous eaters. You know what, that bear scat wasn’t so bad, what other weird things can I eat? Let’s all be a little weirder. Let’s have fun with our food!

Top-Notch Chocolate

I am a chocolate snob. Hershey’s bar, I’ll pass. If I’m going to have a sweet, it better be good. Real good chocolate. The ultimate hands down best chocolate I’ve ever eaten was at Green Acres Chocolate Farm in Bocas del Torro Panana. They also do amazing tours of the chocolate farm, you get to taste raw cacao right from the tree and learn about all the native plants. Truly a magical place.

I certainly have made bear scat with Toll House semi sweet chocolate chips. It’s not my preferred chocolate, but they have them at Costco in a large bag so it’s often what we have at the house. The better the quality of chocolate the better the bear scat. Ideally I like to use a good dark chocolate like Enjoy Life, Lilys, Chocolove or Hu. Plus many of these brands are dairy-free and vegan. Additionally, there is the whole conversation on ethically sourced chocolate to take into consideration. I would much rather spend my dollar with a company who takes a stance against child labor and deforestation. Chocolate is a luxury import, grown nowhere near my home of Maine, it takes a whopping 40 cocoa pods to make one pound of chocolate! Now you can see why good ethically made chocolate can have a hefty price tag. Deliciously worth every penny!

How to Make Bear Scat

This recipe is super easy to make, the hardest part is melting the chocolate. To start you’ll need to setup a double boiler on the stove to melt the chocolate and coconut oil. If you do not have a double boiler you can add the chocolate chips to a small saucepan and turn the stove on to the very lowest heat setting. You’ll need to constantly stir to make sure the chocolate doesn’t burn on the bottom. Making this without a double boiler is doable but a slow and tedious stirring process. With a double boiler you can set it up and walk away. In about 5 minutes the chocolate chips are all melted and voila! This is the very basic double boiler I have and it works great.

Melting chocolate in a double boilerOnce the chocolate and coconut oil has melted, mix the chocolate with the blueberries, cashews, and coconut flakes. Scoop out little clusters onto a baking sheet to cool. Then chill in the refrigerator for about 30 minutes until the chocolate has hardened. Thats it! These tasty little morsels are ready to enjoy. Yum!

Bear scat recipe – hilariously delicious and kid-approved. Homemade chocolate clusters with blueberries, nuts, and coconut flakes. Yum!

Ingredients

  1. 1-1/2 cups of chocolate chips
  2. 1/2 cup of coconut oil
  3. 1 cup of fresh blueberries, washed
  4. 1/2 cup of raw cashews
  5. 1/4 cup of dried coconut flakes or coconut chips

Instructions

  1. Melt the chocolate on the stove using a double boiler. Add water to the saucepan and bring to a low boil. Then place the double boiler on top and fill it with chocolate chips and the coconut oil. Let the chocolate chips warm, stirring occasionally, until creamy and smooth. Usually takes about 5 minutes.
  2. While the chocolate is melting, add the blueberries, raw cashews, and coconut flakes to a mixing bowl.
  3. Once the chocolate has melted add it to the bowl of blueberries, cashews and coconut and mix everything together.
  4. Using a spoon, scoop out bite size clusters of the chocolatey gooey mixture onto a baking sheet to cool. I love to use a silicone mat on my baking sheet for easy cleanup. This should make about 20 small clusters.
  5. Pop the baking tray in the refrigerator for about 30 minutes to chill the chocolate clusters. Then they are ready to enjoy. Yum!

Notes

Bear scat clusters can keep for up to 5 days in the refrigerator. Or freeze them for longer storage.

    I’ve been eating bear scat periodically for a while now, but it was always half baked, and never knew it had a name until now. Your recipe is so much better!! <3
