Tomatillo Guacamole
There is nothing better than homemade tomatillo guacamole, and this super-easy guacamole is always a big hit. Tomatillos make this guacamole a little more tangy than your regular version. Tomatillo guacamole is amazing on tacos! Plus, I love guac with a lot of garlic, lime, and a lot of cilantro. Below is the mild version I make for my kids, but it is even more delicious when you kick up the heat and add a whole jalapeño. I often keep a jar of the tomatillo, jalapeño, garlic, and cilantro mixture in the fridge, and then just smash up a new avocado so there is always a fresh batch of guacamole around!
What are Tomatillos?
Although tomatillos translate to little tomato in Spanish, tomatillos are not tomatoes. Tomatillos have a green papery husk on them, and unlike tomatoes, they are always green. Tomatillos are more closely related to a choke cherry than a tomato. You should be able to find them at most grocery stores in the produce area, usually near the avocados, garlic, and tomatoes. Heck, we even have them at the Shaw’s here in Freeport, Maine. Tomatillos are the primary ingredient in salsa verde. This tomatillo guacamole recipe is kind of a mash-up of guacamole and salsa verde; the result is delicious!

Tomatillos are coated in a papery husk and, beneath that, a sticky sap that needs to be washed off. The fastest way to take care of both tasks at once is to place the whole, unhusked tomatillos in a large heatproof bowl and pour enough boiling water over top to cover by 1 inch. Let the tomatillos stand in the hot water 10 to 15 seconds, then drain. This loosens the husks so they slip off easily and washes away the sap in the process.
How to Buy Good Avocados
I love this quick video for how to find good avocados at the grocery store. Checking under the stem to see if it green or browning is my favorite part. I can’t wait to try this out the next time I’m buying avocados! Living in Colorado, delicious ripe avocados were plentiful and easy to find. But that is not the case here in Maine, almost half the time we get avocados they are not good. Picked too green and sitting too long. Now it’s a luxury when we get a batch of delicious fresh avocados. Hopefully this stem trick helps us sift through the not so good avocados and find the gems. Time to get cooking!

Ingredients
- 2 tomatillos, chopped
- 1/2 jalapeño, minced (for mild)
- 1 clove of garlic, minced
- 1/2 cup of fresh cilantro
- Juice of 1 lime
- 1/2 of a small red onion, diced
- 2 large ripe avocados
- Salt to your liking
Instructions
- Add the tomatillos, jalapeño, cilantro, garlic, and lime juice to the bowl of a food processor or blender. Blend all ingredients until they are mixed. It doesn’t need to be smooth, but no large chunks of tomatillo.
- Add the red onion to the food processor mixture and pulse a couple of times until the onion is finely chopped.
- Mash the avocados in a medium-size bowl using a fork.
- Then add ingredients from the food processor to the bowl with avocados. Give it a mix until everything is evenly incorporated. Add salt to your liking.
- Serve immediately and enjoy!
