Guacamole
There is nothing better than homemade guacamole and this super easy guacamole is always a big hit. Tomatillos make this guacamole a little more tang than your regular version. Plus I love guac with a lot of garlic, lime, and a lot of cilantro. Below is the mild version I make my kids, but it is even more delicious when you kick up the heat and add a whole jalapeño. I often keep a jar of the tomatillo, jalapeño, garlic, cilantro mixture in the fridge, and then just smash up a new avocado so there is always a fresh batch of guacamole around!

Ingredients
- 2 tomatillos, chopped
- ½ jalapeño, minced (for mild)
- 1 clove of garlic, minced
- ½ cup of fresh cilantro
- Juice of 1 lime
- ½ of a small red onion, diced
- 2 large ripe avocados
- Salt to your liking
Instructions
- Add the tomatillos, jalapeño, cilantro, garlic, and lime juice to the bowl of a food processor or blender. Blend all ingredients until they are mixed. It doesn’t need to be smooth, but no large chunks of tomatillo.
- Add the red onion to the food processor mixture and pulse a couple of times until the onion is finely chopped.
- Mash the avocados in a medium-size bowl using a fork.
- Then add ingredients from the food processor to the bowl with avocados. Give it a mix until everything is evenly incorporated. Add salt to your liking.
- Serve immediately and enjoy!
