A little loud, very organized, and you can always find me in the kitchen.
I live in Denver, Colorado with my family and crazy cat Zelda in our 130-year-old haunted victorian house. With two young boys, there is never a dull moment around here!
A handful of years ago, I read a book that changed my life How Not To Die by Dr. Michael Greger. I know, the title is a little cheesy but this book contains the most comprehensive information on how to eat a nutritious diet and how poor nutrition is the leading cause of the top fifteen diseases in Americans. It’s so hard to sift through all of the clutter out there when it comes to nutrition. Until I read this book I thought I ate well. Wrong! I thought my health was more of a matter of luck, as in did I inherit winning ticket genes. Wrong! This book empowered me to take charge of my family’s health and start eating in a delicious, nutritious, and more sustainable manner.
I’ve always loved to cook and tinker in the kitchen, but transitioning to a plant-based diet was still difficult in the beginning. We had to build up a list of about ten staple recipes, which took time, and our kids had to warm up to the idea of eating beans (every day!). But I would never go back, I feel the best I’ve ever felt, have more energy, and I can easily maintain a healthy weight. Through this journey I’ve learned so much and we are still eating delicious foods, they are just far more nourishing. It has been a truly awesome way to reconnect with food. We try our best to eat plant-based, but we are certainly not perfect. We will eat meat if at a BBQ and that’s what’s on the menu, we will still be having turkey for Thanksgiving, and we still use real cheese from time-to-time. Our goal is to make eating a plant-based diet our everyday routine and these other instances the exception. Baby steps friends, we are all only human and our diet is a habit that we’ve developed over many many years. It takes time, energy, and dedication to change. Every teeny try counts!
I am now so passionate about eating healthy foods. My goal is to help others discover that nutritious food can be delicious. I created Bowl of Yum to share tasty healthy recipes with others and help others learn the lost art of cooking from scratch. If I can help just one person discover that making their own bread is loads fun, or if one family adds more vegetables into their diet, or one person tries to eat less meat while on their journey to a healthy weight, I will be fulfilled. Change happens one person, one day at a time. I always love a good conversation about anything food, send me a message if you want to chat or swap tasty recipes.
Thank you for visiting, I hope you find some delicious inspiration for your next meal!
Cheers,
Erica
