Wet Ingredients
  • 2 tablespoons ground flax
  • 1/2 cup warm water
  • 1 cup almond butter
  • 2 tablespoons molasses
Dry Ingredients
  • 1 cup almond flour
  • 1 cup sugar
  • 3/4 cup cacao powder
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°.
  2. In a medium size mixing bowl make your flax egg. Add the ground flax and water. Mix it together and let it rest for about 3 minutes. It will thicken as it sits.
  3. In a separate larger bowl add the dry ingredients: almond flour, sugar, cacao, baking powder, salt and chocolate chips. Mix everything together until combined.
  4. Rotate back to the wet ingredients bowl with the flax egg. Add the almond butter, molasses, and vanilla extract. Mix together using a spatula.
  5. Pour the wet ingredients into the dry ingredients and mix together until there are no dry clumps.
  6. Use a teaspoon to scoop small about 1-inch size balls of dough on to a cookie sheet. Bake for 12-14 minutes. Let the cookies rest on the baking sheet for at least 10 minutes after coming out of the oven. Then these are ready to enjoy!

Notes

Remember, these cookies are ooey gooey. The need to fully cool before being stored or else they tend to clump together. Still delicious, but if you want them to retain their cookie shape, give them ample cooling time!
