Pico de gallo, the rooster’s beak, or so it directly translates from Spanish. A strange name for a tasty salsa. Also known as salsa fresca or fresh sauce. A more fitting name, but I prefer the more eclectic pico de gallo. Whatever you want to call it, this simple salsa recipe is a timeless classic. It’s easy to make and only requires a few ingredients. It’s great on tacos, breakfast burritos, or even just with chips.

The Importance of a Good Salsa

After living in Colorado for over 20 years and spending a significant amount of my life out west, I’ve grown to love Mexcian food. It’s incredible common out west and some of the most affordable and best food you can find for dining out. Over the years I’ve become pretty picky about good salsa. I mean not New Mexico style picky: like the battle of the red vs. green chilies, but I do expect a good fresh spicy salsa. It wasn’t until I moved to the East Coast that I really began to value the worth of a good salsa, and miss the plethora of tacos back home. I’ve yet to find any good, authentic Mexican food here in Maine. Not to say it doesn’t exist, I’m sure there is a place or two, but in cities like Denver, it is all around. You can even get delicious breakfast burritos from carts on street corners. Oh, how I miss those. Even the salsa options in the grocery stores are just not the same; no 505 hatch green chili salsa here. No, our choices are Amy’s or Paul’s salsa. No bueno.

The solution? We just had to start making salsa at home. Pico de gallo is a great place to start. It’s a really simple, no-cooking-required salsa. Plus, if you make this in a food processor, there is very little chopping. Speedy, delicious, and flavorful homemade salsa.

How to Make Pico De Gallo

Toss the tomatoes, onion, jalapeño, lime juice, cilantro, and salt into a food processor. Turn the food processor on a low setting to finely chop all ingredients, not puree. You want some texture to this salsa, but the goal is an even texture. Once you have achieved an even texture, it’s ready to enjoy. Yum!

This pico de gallo recipe is a super simple salsa recipe. Flavorful, but not too spicy. A fresh salsa, this is quick and easy to whip up.

Ingredients

Scale
  • 3 tomatoes, quartered
  • 1/2 small white onion, roughly chopped
  • 1 small jalapeño, chopped
  • 2 limes, juiced
  • Handful of fresh cilantro
  • Pinch of salt

Instructions

  1. Add all ingredients to a food processor. Pulse until the mixture is evenly chopped into a fine salsa texture.

Notes

Stays fresh in the refrigerator for up to 4 days.
