Recipe for an easy-to-make healthy carrot ginger dressing that is amazingly delicious and can be whipped up in 5 minutes!

Ingredients

Units Scale
  • 1 small white or yellow onion, peeled and roughly chopped
  • 3 carrots, washed and ends cut off, roughly chopped
  • 2-inch size knob of fresh ginger, washed and trimmed
  • 1/2 tablespoon honey
  • 1/2 cup of soy sauce
  • 3/4 cup rice vinegar
  • 1/4 cup olive oil

Instructions

  1. Add all ingredients to a blender pitcher: onion, carrots, ginger, honey, soy sauce, rice vinegar, and olive oil.
  2. Blend on high until smooth. That’s it! Dressing is ready to enjoy.

Notes

This dressing is thick, more like a smoothie. You can thin it if it’s too thick to pour, using more vinegar or water if you don’t want it as acidic.
