Bear scat recipe – hilariously delicious and kid-approved. Homemade chocolate clusters with blueberries, nuts, and coconut flakes. Yum!

Ingredients

  1. 1-1/2 cups of chocolate chips
  2. 1/2 cup of coconut oil
  3. 1 cup of fresh blueberries, washed
  4. 1/2 cup of raw cashews
  5. 1/4 cup of dried coconut flakes or coconut chips

Instructions

  1. Melt the chocolate on the stove using a double boiler. Add water to the saucepan and bring to a low boil. Then place the double boiler on top and fill it with chocolate chips and the coconut oil. Let the chocolate chips warm, stirring occasionally, until creamy and smooth. Usually takes about 5 minutes.
  2. While the chocolate is melting, add the blueberries, raw cashews, and coconut flakes to a mixing bowl.
  3. Once the chocolate has melted add it to the bowl of blueberries, cashews and coconut and mix everything together.
  4. Using a spoon, scoop out bite size clusters of the chocolatey gooey mixture onto a baking sheet to cool. I love to use a silicone mat on my baking sheet for easy cleanup. This should make about 20 small clusters.
  5. Pop the baking tray in the refrigerator for about 30 minutes to chill the chocolate clusters. Then they are ready to enjoy. Yum!

Notes

Bear scat clusters can keep for up to 5 days in the refrigerator. Or freeze them for longer storage.
