
Cucumber Salad
Fresh, crisp, tangy and spicy! This cucumber salad recipe is quick to make and so delicious. It’s only April as I’m writing this and my body is definitely craving summer veggies from the garden. If, like me, you need a taste of summer, this salad is sure to delight. Then bookmark this recipe for when your garden is overflowing with cucumbers later this summer and you just don’t know what else to do with them!
Last weekend we picked up some cucumbers at Costco and whipped up this yummy salad, it was an instant hit. I ended up spooning it on top of my baked potato, what an unexpectedly delicious combination! Like a delicious potato salad. I cannot wait to make it again.
Secret Spice
Ironically, Tajin got added on top of my cucumber salad as an afterthought. It just needed a little something more, a little spice. We have a massive bottle (actually two) of Tajin that I accidentally purchased last summer for a margarita taco party. So I figured why not, and sprinkled some on my cucumber salad. I’m so glad I did because the Tajin was amazing. Just what it needed a little spicy, salty, citrus kick. My favorite sushi restaurant in Go Fish Sushi in Denver, serves a delicious cucumber salad that I’ve always loved and I’m now convinced that they also sprinkle a little Tajin on top. It goes so well with the ponzu style dressing. These are the kind of happy kitchen mistakes that I love.
Health Benefits of Cucumbers
Did you know cucumbers can help protect against cancer? According to the Cleveland Clinic “a recent review of research confirms that CuB might be useful in fighting liver, breast, lung and prostate cancer. It shows that CuB may help stop cancer growth and possibly destroy cancer cells.” Additionally, cucumbers are high in fiber, have a low glycemic index and can help regulate blood sugar levels, and are high in vitamn k which is good for bone health. Super tip, leave the skins on your cucumbers. The skins are loaded with fibers and perfectly healthy to eat, don’t toss the good stuff!
How to Make Cucumber Salad
This is such a quick simple recipe, you can make it in about five minutes! First, in a medium size mixing bowl make the dressing. Add the soy sauce, vinegar, and honey to the bowl. Whisk these ingredients together until combined. If the honey is cold and clumping, you can put the bowl in the microwave for 30 seconds to soften it up, then wisk. Next add the chopped cucumbers and sesame seeds. Stir to coat the cucumbers in the dressing. Sprinkle with Tajin and serve. Yum!

Ingredients
- 1/4 cup soy sauce, low sodium
- 1/4 cup rice vinegar
- 1 teaspoon honey
- 2 tablespoons sesame seeds
- 2 cucumbers, chopped
- 1 teaspoon tajin
Instructions
- Mix the soy sauce, rice vinegar, and honey. Stir with a whisk to incorporate the honey.
- Add the chopped cucumbers and sesame seeds to the bowl. Stir to coat the cucumbers with the dressing.
- Sprinkle with the tajin and serve!
