This apple salad with pasta recipe is a delicious dinner salad with spinach, apples, mandarin oranges, pasta, and a simple yogurt sauce. Yum!

Ingredients

  • 2 cups of pasta (penne, fusilli, farfalle—any kind will do!)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • 1 16oz pack of extra firm tofu
  • 11/2 cups of plain yogurt (cashew yogurt for a dairy-free option)
  • 1 teaspoon honey (warmed if needed for mixing)
  • 1 teaspoon Spike Seasoning
  • 1 15oz can of mandarin oranges (unsweetened)
  • 4 cups of fresh spinach, washed
  • 2 granny smith apples, cut into slices
  • Fresh broccoli sprouts

Instructions

  1. Cook the pasta per the manufacturers instructions.
  2. While the pasta is cooking, drain the tofu and press with a towel. Cut the tofu in 1-inch size cubes.
  3. Mix the dijon mustard and olive oil in a medium size mixing bowl. Add the tofu cubes to the mixing bowl. Coat the tofu cubes with the mustard sauce.
  4. Cook the tofu cubes in an air fryer for about 12 minutes at 400 degrees. Until crispy and golden.
  5. Make the yogurt sauce—combine the yogurt, 1 cup of juice from the can of mandarin oranges, 1 teaspoon of honey, and 1 teaspoon of Spike seasoning. Mix together using a whisk.
  6. Assemble the salad. Add about 1 cup of spinach to a large dinner plate. Add 1/4 of the tofu, pasta, granny smith apples, mandarin oranges and broccoli sprouts.
  7. Drizzle with the yogurt sauce. Yum!

Notes

Feta cheese and almond slices are also great on this salad.
