If you are looking for healthy cookie ideas, these are hands down my favorite cookies. These peanut butter chocolate chip cookies are decadent and delicious. The best part—these healthy oatmeal cookies are dairy-free, contain no eggs, and are gluten-free cookies. Does it get any better than that?

These peanut butter chocolate chip cookies were inspired by Oh She Glows flourless peanut butter cookies. I stumbled on this recipe almost 10 years ago and fell in love. I had never made egg-free cookies, and these cookies were delicious, I didn’t know it was possible! This recipe really opened my eyes to vegan baking and thinking outside of the box in the kitchen. I’ve been making a variation of these oat cookies with peanut butter ever since. Eating healthy does not mean never having treats or sweets. It’s all about moderation and eating higher quality nutrient-dense foods. Yes, these cookies have lots of sugar, just like all cookies. Unlike a box of cookies from the store with absolutely no nutritional value, these cookies also contain real oats, coconut flakes, peanut butter, flax seeds, molasses, and chia seeds. All things that are really good for you. I would much rather have a treat like that!

This peanut butter chocolate chip cookies recipe is super easy, no mixer required! I like to mix all the wet ingredients together in one bowl. Baking trick: using hot water helps to make the peanut butter easier to mix! Next I mix all the dry ingredients in a separate larger bowl. Then, add the wet ingredients into the bowl of dry ingredients and do a final mix of the cookie dough. All mixing is done by hand using a baking spatula. Lastly, scoop out about 1 inch size balls of cookie dough onto a baking sheet and pop them in the oven to bake. It’s that easy!

No-egg cookies

Yes, you can make really REALLY good cookies without eggs. My mind was blown the first time I made a vegan cookie and realized that eggs are not necessary for baking. Peanut butter is the shining star ingredient in this recipe, it acts as both the oil and the blinder (egg replacer) and makes this recipe work so well. Also, I’m writing this in March 2025 when eggs are incredibly expensive, over $10 per dozen in some areas and hard to find. There has never been a more perfect time to try out a no-egg peanut butter cookie recipe!

Ingredients

Wet Ingredients

  • 2 tablespoons ground flax seed
  • 1/2 cup hot water
  • 1 cup smooth peanut butter
  • 2 tablespoons blackstrap molasses
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 1 cup rolled oats
  • 1 cup sugar
  • 1 cup unsweetened shredded coconut
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt (omit if using salted peanut butter)
  • 1 cup chocolate chips (use vegan chips for dairy-free)

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a medium size bowl make your flax egg. Combine the ground flax seed and hot water, mix with a spatula until combined and set aside for about 5 minutes.
  3. In a large bowl combine all dry ingredients: oats, sugar, shredded coconut, baking powder, salt, and chocolate chips. Mix all ingredients to combine.
  4. Back to the wet ingredients—add the peanut butter, molasses, and vanilla extract to the flax egg. Mix everything together until well combined.
  5. Pour the wet ingredients into the bowl of dry ingredients. Scrape down the sides to make sure you get all the peanut butter gooeyness. Mix the cookie dough by hand using a spatula until all dry ingredients are combined.
  6. Scoop out approximately 1-inch balls of cookie dough onto a baking sheet. Space out cookie dough balls at least 1 inch apart. Bake for about 12 minutes. Let cookies rest for at least 10 minutes before removing them from the baking sheet. Chef always gets the first cookie!
