Healthy Chocolate Bars

Replace dessert with this energy charged, protein-packed nut bar sweetened with dates and a layer of melted chocolate morsels on top!

Ingredients

  • 1 cup of dark chocolate chips
  • 1 tablespoon of coconut oil
  • 12 dates, pitted
  • 1/2 cup tahini
  • 1/2 cup almond butter
  • 1 tablespoon ground flax
  • 1 cup chopped hazelnuts
  • 1/2 cup chia seeds
  • 1 teaspoon vanilla

Instructions

  1. Put the pitted dates in a mixing bowl, and pour approximately 2 cups of boiling water over the dates. Let the dates soak for about 10 minutes to soften.
  2. While the dates are soaking, set up the double boiler—fill a small saucepan about 1/3 the way full with water. Set the heat to medium and place your double boiler on top. Add the chocolate chips and the coconut oil to the double boiler, no need to mix until the ingredients begin to melt. Make sure the water does not start to boil; you don’t need much heat to melt the chocolate chips! Let this sit for 5-10 minutes until the chocolate chips are melted and the mixture is smooth when stirred.
  3. Back to the dates—strain the dates, you want them to be as dry as possible. Return the dates to the mixing bowl and smash them with the back of a fork. You are looking for a paste consistency, but it’s ok if it’s a little chunky.
  4. Add the tahini, almond butter, ground flax, chopped hazelnuts, chia seeds, and vanilla to the mixing bowl and stir all the ingredients together.
  5. Cut a piece of parchment paper to line the bottom of a baking dish (approx. 12×9″). Press the gooey nut butter mixture into the bottom of the pan to create the base layer for the bars.
  6. Back to the melted chocolate—give this one last stir to make sure the coconut oil is well combined and then pour the chocolate over the nut butter mixture.
  7. Pop the dish in the freezer for approximately 45 minutes, or until the chocolate has hardened again and then these are ready for eating. Yum!

Notes

  • If you do not have a double boiler, you can melt the chocolate in a saucepan on the stove but you’ll want to have the heat set to the lowest setting and you’ll need to stir constantly to avoid burning.
  • Can easily make this recipe vegan by using vegan chocolate chips.
