3 large Yukon gold potatoes, (about 4 cups once baked and peeled)
2 cups of flour
3/4 teaspoon of salt
Dash of nutmeg
Instructions
Cook the whole potatoes in the microwave for about 5 minutes, or until cooked.
Once cooked, cut the potato in half and scoop the potato flesh out of the skin and toss it in a medium-sized bowl.
Add the flour, salt, and nutmeg to the bowl. Mix all ingredients together, you may need to use your hands to kneed since this is a dry dough. Mix until everything is incorporated into a single dough ball.
Flour a work surface, break off about a 2″ round chunk of the dough ball. Using both hands, roll the dough ball into a long snake-like shape. Make a cut about every inch, and there you have it homemade gnocchi!
If you want this to look really authentic grab a fork and roll it around each piece of gnocchi to give it the signature texture.
Cooking Instructions
Toss the gnocchi into a pot of boiling water, cook for about 3-4 minutes or until gnocchi are floating on the surface of the water. Drain and serve!
Or…
You can fry these as well. Toss 4 tablespoons of olive oil into a saute pan. Once the oil heats up add the gnocchi, cook until lightly browned on each side, about 3 minutes per side.
