Vegan Gnocchi

Ah homemade pasta, nothing compares! It is more flavorful and has such great texture. Plus, I love that pasta making becomes a family affair. It’s such a great cooking activity for kids. They love to play in the flour, squish the dough, and make fun shapes. See ya later play dough, this is the real deal!

Hot Potato

We like to use Yukon gold potatoes for our gnocchi, they are creamy, almost buttery, and add a great flavor to the gnocchi. You can use any type of potatoes, even sweet potatoes are a tasty option. The secret to making good gnocchi is you must bake the potatoes before making the dough. Do not boil the potatoes. I repeat, do not boil the potatoes, there will be too much liquid and your gnocchi will be soggy, which is no bueno. Plus, baking the potatoes makes this recipe the most super easy pasta recipe ever. No potato peeling, just pop them in the oven or microwave and then scoop out the potato goodness once they’ve cooled.

Next, smash up the potatoes in a bowl and then add the flour, salt, and nutmeg. Use some elbow grease and mix everything together. You want the dough to be strong and dry, not sticky. The thicker your dough, the better texture your gnocchi will be.

Lastly, flour a work surface and kneed the dough. Then tear off a 2-inch chunk of dough. Now for my favorite part, using both hands roll the dough into a long snake-like shape, about 1/2 an inch in diameter. Cut the snake-dough into 1-inch pieces. To make the ridges, grab a fork and gently roll it around each piece of gnocchi. That’s it, folks! To cook, you can either give these a quick 3-4 minute boil in some water or fry them up in olive oil. They are delicious both ways. Yum!

A deliciously simple four-ingredient vegan gnocchi recipe. Truly the easiest pasta to make!

Ingredients

Scale
  • 3 large Yukon gold potatoes, (about 4 cups once baked and peeled)
  • 2 cups of flour
  • 3/4 teaspoon of salt
  • Dash of nutmeg

Instructions

  1. Cook the whole potatoes in the microwave for about 5 minutes, or until cooked.
  2. Once cooked, cut the potato in half and scoop the potato flesh out of the skin and toss it in a medium-sized bowl.
  3. Add the flour, salt, and nutmeg to the bowl. Mix all ingredients together, you may need to use your hands to kneed since this is a dry dough. Mix until everything is incorporated into a single dough ball.
  4. Flour a work surface, break off about a 2″ round chunk of the dough ball. Using both hands, roll the dough ball into a long snake-like shape. Make a cut about every inch, and there you have it homemade gnocchi!
  5. If you want this to look really authentic grab a fork and roll it around each piece of gnocchi to give it the signature texture.

Cooking Instructions

  • Toss the gnocchi into a pot of boiling water, cook for about 3-4 minutes or until gnocchi are floating on the surface of the water. Drain and serve!

Or…

  • You can fry these as well. Toss 4 tablespoons of olive oil into a saute pan. Once the oil heats up add the gnocchi, cook until lightly browned on each side, about 3 minutes per side.
