Vegan Coconut Lime Popsicles
The very best way to cool off on a hot summer day is with a good ole popsicle. These delicious plant-based coconut lime popsicles are made with coconut milk, fresh lime, and a little bit of maple syrup to sweeten things up. Just three ingredients, that’s it! No cooking and nothing complicated involved. Sometimes the best things in life are just plain simple. Plus these popsicles are a great way to get your kids in the kitchen and introduced to cooking. My kids love to help make them, but mostly for a chance to lick the bowl!
I really like these little popsicles. My three-year-old likes to savor his popsicle and it usually ends up as a sticky mess before he’s finished. These little popsicles are the perfect size for a treat, but not enough to spoil the next meal. Plus he can finish the whole thing before it’s a melty mess! So if you’re in the market for popsicle molds I recommend finding some smaller ones. There are tons of baby size molds available.

Ingredients
- 1 lime
- 13.66 ounce can unsweetened coconut milk (with fat)
- 3–4 tablespoons maple syrup
Instructions
- Zest the lime. Add the lime zest to a medium-size bowl.
- Juice the lime and add it to the bowl.
- Add the coconut milk to the bowl and mix everything together.
- Pour the mixture into popsicle molds and freeze overnight, or at least 8 hours. Yum!
