Mint Watermelon Juice
This juice is so simple to make and absolutely refreshing on a hot summer afternoon. My kids would drink it every day, if only we had enough watermelon!
This is certainly at it’s best with deliciously ripe watermelon, but it is also a great way to use up a not so great watermelon. If you cut into a watermelon and it is too ripe( almost powdery) instead of wasting it, make it into some mint watermelon juice and use that thing up!
I almost didn’t write a recipe for this because it’s so simple, but my kids just love it and sometimes the best things in life are ever so simple. In just 5 minutes you can be drinking down a healthy and refreshing whole foods beverage. Oh so good.
Mint Watermelon Juice
Delicious plant-based watermelon juice with fresh mint. This juice is sweet and refreshing at any time of the day. With only 3 ingredients and no added sugar, this is super easy to make. A tasty and healthy beverage, yum!

Ingredients
- One small seedless watermelon
- 6 ice cubes
- 1 cup of fresh mint leaves, roughly chopped
Instructions
- Cut the watermelon into large chunks that will fit easily in your blender. Make sure to remove the watermelon rhine.
- Add a couple of chunks of watermelon and fresh mint leaves to the blender. Blend on a high-speed setting to puree the mint leaves.
- Add the rest of the watermelon and ice cubes to the blender. Blend on high until smooth.
- Pour into glasses and serve immediately. Yum!
Notes
Can be stored in the refrigerator for about a day.
