  • Yield: 2 pizzas (14 inch round) 1x
  • Category: Pizza
  • Cuisine: Healthy
  • Diet: Vegetarian

Ingredients

Units Scale
  • 1 cup of luke warm water (approximately 85-95°)
  • 2 1/4 teaspoons of rapid rise yeast
  • 1 teaspoon of sugar
  • 2 cups of all-purpose flour
  • Splash of olive oil

Instructions

  1. In the bowl of an electric mixer with a dough hook add the warm water and yeast. Let the mixture sit without stirring for 5 minutes until it begins to froth.
  2. Add the sugar to the mixer and mix it into the yeast mixture using a spatula.
  3. Turn the mixer on low and slowly add the flour.
  4. Continue mixing until all ingredients are well combined and form a dough ball.
  5. Sprinkle a little flour on a work surface. Transfer the dough ball from the mixer and kneed the dough by hand for about 2 minutes.
  6. Grease the inside of a large mixing bowl with olive oil.
  7. Place the dough ball in the mixing bowl and cover it with a beeswax wrap or damp towel.
  8. Place in the refrigerator overnight.
  9. Pull the dough out of the refrigerator and place it at room temperature 4 hours before pizza time.
  10. Sprinkle a little flour on a work surface. Then knead the dough ball to get rid of any air bubbles. Flour a rolling pin and roll out the dough as thin as possible. Transfer to a baking sheet.

Notes

Pro tip: mix up an extra-large batch of dough, and freeze it to be used at a later date. I like to freeze individual pizza size dough balls. That makes things super easy on pizza making day. For defrosting frozen dough, place it in the refrigerator overnight. Then pull it out of the refrigerator and keep it at room temperature approximately four hours before pizza making time.
